Every summer had its own treasure - big glass jars of raw mangoes soaking in spices, lined up on terraces under the sharp sun. Among them, there was always one jar that children waited for the most - the meetha achaar. Sticky, tangy, and sweet, it was the one pickle that found its way into school tiffins, paratha rolls, and even straight onto our fingers when maa wasn’t looking.

Golden chunks of mango coated in jaggery and spices - soft, juicy, and bursting with flavour - this achaar carried the taste of sunshine itself. It was less about balance and more about indulgence, about the guilty joy of finishing half a dabba in a single sitting.
